No Bake Cookies
Ingredients
* 2 cups white sugar
* 1/2 cup milk
* 1/2 cup butter
* 4 tablespoons unsweetened cocoa powder
* 1/2 cup crunchy peanut butter
* 3 cups quick-cooking oats
* 1 teaspoon vanilla extract
Directions
In a medium saucepan, combine sugar, milk, butter, and cocoa. Bring to a boil, and cook for 1 1/2 minutes. Remove from heat, and stir in peanut butter, oats, and vanilla. Drop by teaspoonfuls onto wax paper. Let cool until hardened.

When I was growing up we often had some variation of no bake cookies for Family Home Evening treat. My Mom, Nelada, was always trying to find new ways to make our snacks more healthy, over the years we tried lots of different variations of this recipe.
ReplyDelete*Use less sugar - they won't harden if you only use 1 cup, but they are still good!
*If you don't have cocoa you can use Hersey's syrup.
*Creamy peanut butter works too, I just like the extra crunch that comes with crunchy.
*You don't have to add chocolate - They are good with just peanut butter too.
*You can try alternative sweeteners, like honey or apple juice concentrate (actually pretty good, but the texture will be different.)
[At "The White House" we called these "Fast Cookies" because they would dissapear fast, and the peanut butter version (just leave out the cocoa)which we had more often we called "Quick Cookies."]
[I hear that at the Bakes' house they are known as "Oooey-Gooeys.]
